This study examines the role of wild mushrooms as a protein source in Central Europe, using the Czech Republic as a representative case. It finds that wild mushrooms contribute approximately 0.2% of daily per capita protein intake and account for about 3% of the agricultural GDP. The real price of wild mushrooms is rising and independent of supply, indicating growing consumer demand and their potential importance for food security during crises.
