This paper develops a novel, simple, and low-cost colorimetric method using resazurin (a pH/redox indicator) to measure antioxidant activity of gelatin biopolymer films (GBFs) in a model food system (agar-emulsifier-soybean oil, AES-R). The AES-R system effectively tracked lipid oxidation via redness changes, with BHA-based GBFs showing strong antioxidant activity (slow color change) and ascorbic acid showing prooxidant effects at high concentration (1.0%). The method correlates with DPPH radical scavenging results and offers a practical alternative to traditional time-consuming antioxidant assays for food packaging research.
