This randomized crossover study in 100 community-dwelling older adults (≥60 years) found that a meat-based lunch meal achieved the recommended 0.4 g protein/kg body weight/meal target in about two-thirds of participants, while a plant-based meal reached this target in only one-fifth of participants. Adding culinary spices significantly improved liking and flavor intensity ratings for the plant-based meal but did not increase actual protein or food consumption for either meal type. The findings suggest that while spices can enhance palatability, achieving adequate protein intake in older adults is more dependent on protein density and food source than on flavor enhancement alone.
