This study investigated the effects of supplementing finishing lamb diets with 0, 50, or 100 g/kg dry matter of chia seeds on growth performance and meat fatty acid profiles. Chia seed inclusion did not improve carcass weight or non-meat components but significantly modified the fatty acid profile of Longissimus thoracis muscle, decreasing saturated fatty acids (particularly stearic acid) and increasing monounsaturated fatty acids (particularly oleic acid). These findings suggest chia seed supplementation can improve the fatty acid composition of lamb meat without negatively affecting growth performance, potentially offering health benefits to consumers.
