This study determined that the optimal thermal condition for producing black garlic (BG) with high S-allyl cysteine (SAC) content from both Thai multi-clove and Chinese single-clove garlic is 70°C with 80% relative humidity for 12 days in an industrial fermentation chamber. Under these conditions, SAC content increased approximately 139-fold in Thai BG and 122-fold in Chinese BG compared to fresh garlic, while antioxidant activities (FRAP, DPPH, ORAC) were 34-, 6-, and 3-fold higher, respectively. These findings provide a standardized production method for high-SAC BG products, supporting their use as functional foods with potential clinical applications in reducing oxidative stress and inflammation.
