This study developed a method to produce macroscale cultured fat tissue by growing adipocytes in thin 2D layers and then aggregating them into 3D constructs using food-grade binders like alginate or transglutaminase. The resulting cultured fat had compressive strengths similar to native animal fats (e.g., ~12.8 kPa for alginate-based cultured fat vs. 20.2 kPa for beef fat at 50% strain), and its fatty acid composition could be tuned via lipid supplementation during culture. This approach bypasses traditional mass transport limitations of 3D tissue engineering and offers a scalable path to producing fat for cultivated meat and hybrid plant-based products.
