This study evaluated thermal and mechanical pre-treatments combined with enzymatic hydrolysis to improve spent coffee grounds (SCG) nutritional value for ruminants. Autoclaving did not improve digestibility, and enzymatic hydrolysis reduced IVOMD of the solid phase (by 21–32%) when the liquid fraction was removed, though the negative effects were avoided when the liquid phase was retained. Grinding emerged as the most promising strategy, with fine grinding increasing IVOMD to 429 g/kg OM versus 261 g/kg OM for unground samples, supporting its use for upcycling coffee waste into animal feed within a circular economy framework.
