This narrative review summarizes bioprocessing strategies (e.g., extraction, fermentation, microencapsulation) to enhance microalgae's nutritional and functional properties for food use, highlighting their potential as a sustainable protein source. The main findings are that processing can increase specific beneficial compounds and mitigate sensory drawbacks, but significant limitations include the negative impact of fortification on food texture/flavor and a lack of data on in vivo digestibility and safety for many species.
