This preclinical study evaluated the phytochemical composition and biological activities of potato, onion, and garlic peel extracts. A total of 47 compounds were identified via UHPLC-ESI-qTOF-MS/MS. Onion peel extract (OPE) exhibited the highest polyphenolic content and strongest antioxidant activity. In IL-1β-stimulated mouse chondrocytes, OPE significantly inhibited the overproduction of NO, MMP-13, NF-κB p65, IL-6, TNF-α, COX-2, and iNOS, suggesting anti-osteoarthritis potential. OPE showed promising antibacterial activity against methicillin-resistant Staphylococcus aureus (MRSA). In an LPS-induced Hfb4 skin cell model, OPE reversed inflammatory and oxidative stress markers. In an in vivo mouse model, OPE accelerated wound healing, restoring tissue physiology mainly through activation of the AP-1 signaling pathway.
