This narrative review summarizes the genetic and biotechnological advances in understanding carotenoid metabolism in Brassica crops, focusing on key genes like CRTISO, ZEP, CCD4, and OR that regulate pigment accumulation and flower/leaf color. The main finding is that manipulating these genes via techniques like CRISPR/Cas9 can alter carotenoid profiles and crop coloration, with potential implications for improving nutritional value. A key limitation is that the review is based on plant genetics and does not provide direct human clinical evidence.
